Salmon Flatbreads with Yoghurt Dressing
Ingredients:
- 4 x small flatbreads 
- 200g smoked salmon 
- 1 packed cup of herbs (parsley/mint/dill) 
- ¼ cup extra virgin olive oil 
- ½ tsp salt 
- ¼ tsp pepper 
- ½ red onion, sliced finely 
- Juice and zest of one lemon 
- ½ cup Chris’ Traditional Greek-Style Natural Yoghurt 
- ¼ cup water 
Method:
- Preheat oven to 180 degrees Celsius 
- Place herbs, and olive oil into a bowl and combine well 
- Place flatbreads on baking trays and equally spoon herbs onto them, spreading out slightly 
- Top with salmon and onion then bake for 20 minutes 
- While it’s cooking, combine lemon, water, yoghurt, salt and pepper then set aside 
- Once flatbreads are cooked, serve with yoghurt dressing and enjoy
