Spring Onion Pasta Salad

 

Ingredients:

For the salad:

  • 300g short pasta (penne, fusilli, or bow ties work well)

  • 200g cherry tomatoes, halved

  • 200g baby bocconcini, halved

  • 1 cup fresh basil leaves, torn

  • Salt & pepper, to taste

For the dressing:

  • ½ cup Chris’ Homestyle Spring Onion Dip

  • 1–2 tbsp olive oil

  • 1 tbsp lemon juice or white wine vinegar

 

Method

  1. Cook the pasta according to packet instructions until al dente. Drain and rinse under cold water to cool it quickly. Set aside.

  2. Make the dressing: In a small bowl, whisk together Chris’ Homestyle Spring Onion Dip, olive oil, and lemon juice. Add a splash of water if needed to thin it slightly for easy tossing. Season with salt and pepper.

  3. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, bocconcini, and basil.

  4. Pour the dressing over the salad and gently toss until everything is well coated.

  5. Taste and adjust seasoning. Chill for 30 minutes before serving for best flavour.
