Falafel Roll

 

Ingredients (Makes 2 rolls)

  • ½ cup Chris’ Homestyle Hommus

  • 4–6 cooked falafels (store-bought or homemade)

  • 2 large bread rolls

  • 1 cup fresh rocket

  • 1 cup cherry tomatoes, halved

  • Olive oil

  • Salt & pepper, to taste

  • Optional: lemon juice or pickled red onion for extra tang

 

Method

  1. Warm the falafels in the oven or a pan until heated through and lightly crisped.

  2. Cut the rolls in half.

  3. Spread a generous layer of Chris’ Homestyle Hommus over the base of each roll.

  4. Layer on the rocket, followed by cherry tomatoes, and top with falafels.

  5. Drizzle with olive oil, season with salt and pepper, and add a squeeze of lemon juice or a few pickled onions.

  6. Close roll and serve fresh!
