Lamb Salad with Tzatziki

 

Ingredients (Serves 2–3)

  • ½ cup Chris’ Homestyle tzatziki

  • 200–250g cooked roast lamb, thinly sliced or shredded

  • 4 cups mixed salad leaves (e.g. rocket, baby spinach, lettuce )

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ½ cucumber, sliced or halved lengthways

  • ¼ cup pitted Kalamata olives

  • Olive oil

  • Lemon juice

  • Salt & pepper

Method

  1. Warm the lamb slightly in a pan.

  2. In a large bowl or on a platter, arrange the salad leaves, then layer with cherry tomatoes, cucumber, onion, and olives.

  3. Place the lamb slices over the salad.

  4. Top generously with Chris’ Homestyle Tzatziki

  5. Season with salt and pepper and finish with a drizzle of olive oil and lemon juice to brighten it up.
