Sun- Dried Tomato Pizza Toast
Ingredients:
Serves: 1–2
Prep time: 5 mins
Cook time: 10 mins
4 tbsp Chris’ Sun-dried Tomato dip
2 thick slices of sourdough or rustic bread
3–4 tbsp cottage cheese
4–6 pieces of sun-dried tomatoes, chopped
Fresh rosemary
Olive oil, for drizzling
Salt & pepper, to taste
Optional: chilli flakes or shaved parmesan
Method:
Lightly toast your bread slices until just golden.
Spread each slice with Cottage Cheese
Generously spread Chris’ Sun-Dried Tomato dip on top. Don’t worry about making it perfect — a bit of texture is nice.
Scatter over the chopped sun-dried tomatoes and a rosemary.
Season with a little salt and pepper, and drizzle with a touch of olive oil.
Serve immediately. Top with optional chilli flakes or a few shavings of parmesan if desired.
