Sweet Potato, Spicy Capsicum Gnocchi
Ingredients:
- Fresh Sweet Potato Gnocchi 
- 1 200g tub Chris’ Homestyle Spicy Capsicum Dip 
- 8 slices prosciutto 
- 1 cup walnuts, chopped 
- 1 bunch fresh basil roughly torn 
- 1 lemon 
- Olive oil 
- Parmesan cheese, to serve 
Method:
- Pre-heat oven to 180 degrees Celsius 
- Place the prosciutto flat on a lined tray and bake for 10 minutes, or until crispy 
- Pre-heat the olive oil in a frypan on the cooktop 
- Panfry the sweet potato gnocchi until cooked through 
- Reduce heat to low and stir through the Chris’ Spicy Capsicum Dip, walnuts and basil. 
- Grate the rind of half a lemon over the gnocchi and squeeze the juice of half of the lemon on top. 
- Break the crispy prosciutto into shards and sprinkle on top of the gnocchi, along with a generous amount of parmesan cheese and serve.
